Making spring rolls at home is a more recent addition to my recipe repertoire. We always made samosas and that was the default filled pastry but as the kids grew older and started going out spring rolls become more popular, especially the giant spring rolls served as starters at a popular fast food franchise here in the neighbourhood Pranesh lives in. The availability of the spring roll pastry allowed me to explore different combinations of fillings and this is my chicken and mushroom spring roll.
Ingredients
500g chicken breasts - cubed
2 small onions, finely chopped
250g button mushrooms, finely sliced
1/2 green pepper, cubed small
2 carrots finely sliced
Spring onions - use the roots and tops
Grind of salt and pepper - to taste
Sprinkle of smoked paprika
1 tbs chicken spice
1 tsp crushed ginger and garlic
1 tbs Sweet Chillie mixed with 1 tbs mayonnaise
A splash of olive oil
1 tbs soy sauce
1 tbs lemon juice
spring roll pastry - will use 12-18 sheets
2 tbs flour mixed with water for "glue"
Dipping sauce to serve with - we mixed tomato sauce, sweeet chillie and nandos peri peri
