Happy Malaysia Day season everyone! What’s more Malaysian than our very own fav street food, Char Kway Teow. It’s a dish with flat rice noodles, shrimp, eggs, bean sprouts, and chives, all stir-fry in a flavorful sauce made from soy sauce, chili, and depending on preference, a bit of belacan (shrimp paste). What makes a Char Kway Teow more oomph is definitely the “wok hei” or to translate it, the breath of wok; the taste that is imparted by cooking on a wok with high heat. The best way is to cook Char Kway Teow fresh by batch and that’s what I’m doing today. 🔥
Ingredients - For 6 pax:
✏️Prawn shell (Fry to make flavour oil)
✏️Fish cakes (thin slice)
✏️500g - Prawn (seasons with sugar & salt)
✏️ 1 inch - Chives
✏️Bean sprouts
Chili paste ingredient: (Blended)
✏️6 nos - Red chillies
✏️6 nos - Bird eye chillies
✏️3 nos - Shallots
✏️5 cloves - Garlic
✏️Salt
✏️Water
Seasoning sause: ( 1 ½ tbsp per portion)
✏️4 tbsp - Soy sauce
✏️2 tbsp - Fish sauce
✏️1 tbsp - Dark caramel
✏️1 tbsp - Oyster sauce
✏️White pepper
✏️1 tsp - MSG
✏️Garlic (minced)
