Authentic Kerala Dishes With My Personal Touch 😍

Ingredients for Chicken Roast

Chicken -3/4 kg

Marination

Kashmiri Chilli Powder - 11/2 tsp
Chilli Powder - 1 tsp
Turmeric Powder -1/4tsp
Garam Masala -1/4tsp
Pepper Powder -1/2tsp
Salt -1 tsp
Vinegar or Lime Juice -2tsp

Oil -for frying

Oil -4tbsp
Spices - cardamom ,cloves ,bay leaf , cinnamon
Ginger Garlic Paste -1tbsp
Onion -2
Green chilli -3
Curry leaves -
Chilli Powder - 1 tsp
Kashmiri chilli powder -1tsp
Turmeric Powder -1/4tsp
Fennel seed powder -1/4tsp
Coriander powder -2tsp
Garam Masala -1/2tsp
Pepper Powder - 1/4tsp
Tomato -1 big
Tomato ketchup -1 tbsp
Soya sauce -1tsp
Salt -
Sugar -1/4tsp
Curryleaves -
Water -1/2 cup
Cashew paste - of 10

Coconut Rice -

Rice -2 cup
Coconut Milk -4cups
Salt -11/4tsp
Sugar -1 tsp
Spices - cardamom ,cloves ,bay leaf , cinnamon
Coconut Oil -2 tbsp


Method

Chicken Roast –
Marinate the chicken with Kashmiri chilly powder, red chilly powder, turmeric powder, garam masala, pepper powder, salt and vinegar/lime juice. You can add color (optional). Marinate the chicken well. Keep t aside for min 20 mins.

Fry the chicken pieces. It should be ¾ th done. Remove the fried chicken and keep aside.
Take another pan and add oil to that. On medium heat, Add cinnamon, clove, bay leaf and cardamom. Add 2 onions and 3 green chllli . saute it . add salt and saute again. Add ginger garlic paste. Saute till brown shade. Add curry leaves. Saute well. Add oil if necessary. On low flame, add turmeric powder, Kashmiri chilly powder and chilly powder. Saute well. Then add fennel seeds powder and saute again. Add coriander pepper powder and garam masala. Add a ripe tomato. Saute well. Add some ketchup. Saute. Add soya sauce and saute again. Add cashewnut paste.Cook well. Add the fried chicken. Mix well. Add a pinch of sugar (optional). Add ½ glass of water and cook the chicken well for 10 mins. Check the spice level. Add some curry leaves and sprinkle some coconut oil and add some green chilly.

Coconut Rice –
Take soaked and drained Kaima rice for this recipe. Heat some coconut oil in a cooker and add cinnamon , 3 cloves, 2 cardamom. Saute this. Keep 4 glasses of coconut milk ( 1 ½ grated coconut with 4 glasses of water).Put the rice into the oil and fry a little. Add the coconut milk. Add salt. Stir well. Add a pinch of sugar (optional). Let the coconut milk boil well. On high flame for one whistle cook the rice. After one whistle remove from the stove and wait for pressure release by itself. Make the rice fluffy with a fork and the rice is ready.
