Recipes: FRUIT: Strawberries Blueberries Papaya Grapes Watermelon Pineapple COCONUT COD: INGREDIENTS 6 Cod Fillets 6 Tbsp Olive Oil 1 Can Unsweetened Coconut Milk (14 oz) 4 Garlic Cloves Smashed 1 Tsp Ginger – grated 3 Tbsp Fresh Dill – finely chopped 1 Lemon – half sliced, half for squeezing In a deep pan heat Olive Oil and throw in Garlic, Ginger and Lemon Slices. Season Cod with Salt and Pepper and quickly brown on both sides, adding more oil if needed, lower heat then add Coconut Milk and Dill. Simmer until flaky in low heat. Drizzle w/ lemon juice CARROT SALAD: 4-5 carrots shredded 1 bunch of fresh mint or basil chopped Lemon and olive oil for dressing (on the side) Salt to taste (Grate the carrots with a grater or food processor or buy store bought shredded to save time) BEEF KOFTA BOWLS: Lettuce bed for tabbouleh Beef kofta - roll into ovals (season 1-2 lb of ground beef with allspice, minced garlic, handful of parsley, any kind of shallot, chili, salt, pepper, 3 tbsp olive oil, 1 egg) cook on med heat for about 4 min on each side 4 - 5 Persian Cucumbers chopped Tabbouleh Yogurt of choice with olive oil Pita bread Kalamata olives TABBOULEH: INGREDIENTS 1/2 Cup Fine Bulgur Wheat 2 Bunches of Italian Parsley – washed and dry 1 Handful of Fresh Mint – washed and dry 1 Bunch of Green Onions 2 Tomatoes – seeded and finely chopped 2 Lemons – Juiced ¼ Cup Olive Oil Salt to taste Soak Bulgur in lemon juice and olive oil While the Bulgur is absorbing the liquid, finely chop the parsley, mint, green onions and tomatoes. Add the soaked Bulgur to the chopped vegetables, add salt to taste and gently mix all together. Put dressing on the side for meal prep (olive oil and lemon) Can add: pomegranate seeds, chopped cucumbers, chickpeas Hope you enjoy!!
