MERLUZA A LA MARINERA
Ingredientes:
3 lomos de merluza (800 gr), 8 mejillones, 8 gambones, 200 gr de almejas, aceite de oliva, 2 dientes de ajo, perejil, 1 cebolla, 1/2 pimiento rojo,
3 tomates de pera, harina, 1 pimiento choricero, 100 ml de vino blanco,
2 cazos de fumet, sal y pimienta.
Para el fumet: las cabezas y cáscaras de 8 gambones, 1/2 cebolla, 1/2 pimiento verde, 1 tomate, 1 copita de brandy, 800 ml de agua, sal y aceite de oliva.
HAKE WITH SEAFOOD
Ingredients:
3 hake loins (800 gr), 8 mussels, 8 prawns, 200 gr of clams, olive oil, 2 cloves of garlic, parsley, 1 onion, 1/2 red pepper,
3 pear tomatoes, flour, 1 chorizo pepper, 100 ml of white wine,
2 scoops of stock, salt and pepper.
For the stock: the heads and shells of 8 prawns, 1/2 onion, 1/2 green pepper, 1 tomato, 1 glass of brandy, 800 ml of water, salt and olive oil.
MERLU AUX FRUITS DE MER
Ingrédients:
3 longes de colin (800 gr), 8 moules, 8 crevettes roses, 200 gr de palourdes, huile d'olive, 2 gousses d'ail, persil, 1 oignon, 1/2 poivron rouge,
3 tomates poires, farine, 1 piment chorizo, 100 ml de vin blanc,
2 boules de bouillon, sel et poivre.
Pour le bouillon : les têtes et carapaces de 8 crevettes, 1/2 oignon, 1/2 poivron vert, 1 tomate, 1 verre d'eau de vie, 800 ml d'eau, sel et huile d'olive.
PESCAR COM MARISCO
Ingredientes:
3 lombos de pescada (800 gr), 8 mexilhões, 8 camarões, 200 gr de amêijoas, azeite, 2 dentes de alho, salsa, 1 cebola, 1/2 pimenta vermelha,
3 tomates pera, farinha, 1 chouriço, 100 ml de vinho branco,
2 colheres de caldo, sal e pimenta.
Para o caldo: cabeças e cascas de 8 camarões, 1/2 cebola, 1/2 pimento verde, 1 tomate, 1 copo de conhaque, 800 ml de água, sal e azeite.
