*Ingredients
300g Methi seeds cleaned & powdered
300g Ghee Total
400 gms Jaggery Organic or Palm as per your taste
2cups Wheat Flour
50g Almonds
50g Cashew nuts
50g Pistachios
50g Makhana/Lotus seeds
1big cup grated dry Coconut/Kopra
100g Gond
100g dry Dates
2tbsp Melon seeds
2tbsp Sesame seeds
2tbsp Flaxseeds
2cups or 200g Wheat flour
Spices:
2"Dry Ginger powder
2nos Pipli/Ipli/long Pepper
10-12 Cardamoms
1/8pc Nutmeg
1tsp Peppercorns
*Method:
1. Grate finely dry Coconut/Kopra & keep aside.
2.Methi seeds clean it & grind into fine powder. Soak it powdered Methi in 100g Ghee for 8 -10 hrs. Or keep it overnight soaked.
3. Take a Pan add 1tsp Ghee, roast Makhanas till crispy, set aside.
4. Same pan add 1tsp ghee & Roast Almonds, Cashews, & pistachios till moisture disappears, keep aside.
5. Roast Melon Seeds, Sesame & Flaxseeds crispy keep aside.
6. Roast Dry Dates chopped 2mins set aside.
7. Roast dry Coconut till slight brown colour & keep it aside.
8. Grind Makhana & tranfer in a big vessel, grind dry dates put in it, grind nuts & seeds & tranfer in the same Vessel.
9. Dry roast Wheat flour on low flame for 10mins by stirring continuously, then add 3-4tsp of Ghee mix it well & roast it on low flame stir it continuously for 10 mins. till it's nice aroma comes, slightly change it's colour into brown, till raw smell goes & keep aside to cool
10. Now add 2tbsp more Ghee & roast soaked Powder Methi, roast it on very low flame for 5-6mins, stir it continuously, add grounded Gond in it, roast till it'll be fluffy & pop up & mixture will be doubles, roast it till rawness goes. Transfer in the same Vessel mix it all well.
11. Melt Jaggery add 2-3spoon Ghee, cook it till melts, add spice grounded powder. No string required just cook it till sticky. Keep aside.
12. Add roasted Wheat flour, dry Coconut, mix it all with other ingredients, add hot Jaggery in it combine everything well together for 2mins.
13. Mixture while it's warm & tolerate to touch, apply ghee on palms & form round Laddus.
14. Let it cool all Laddus completely. Fill it in a airtight glass or steel container, keep outside. Use it for 2-3 months. Eat 1 per day Adults & Half for Children can give 1glass of milk.
No need to Refrigerate it.

Tips - 1. To preserve & keep it for a long time/shelf life roast each & every ingredients till it's moisture disappears.
2. You can add any dry fruits as desired.
3. Keep soaked Methi powder in Ghee for it's long time preservation. No need to add milk or water.
4. Add more or less Jaggery as per your taste. If little bitterness you feel while eating these laddus are good & increase tastes in our pallets.
