Mohan Thal Recipe
Ingredients:
Besan (gram flour) – 1 cup
Ghee – 1/2 cup (plus extra for greasing)
Milk – 2 tbsp
Sugar – 3/4 cup
Water – 1/4 cup
Cardamom powder – 1/2 tsp
Saffron strands – a pinch (optional)
Chopped dry fruits (almonds, pistachios) – 2-3 tbsp
Instructions:
Grease a plate with ghee and keep it ready.
Roast the Besan:
Heat ghee in a thick-bottomed pan.
Add besan and roast on low flame, stirring continuously till it turns golden and gives a nutty aroma. This may take 10–12 minutes.
Add milk and stir well. It will froth and become slightly grainy in texture. Cook for another 2 minutes. Turn off the flame.
Prepare Sugar Syrup:
In a separate pan, mix sugar and water.
Boil until you get a one-string consistency. (Dip your finger and check between thumb and finger; a single thread should form.)
Combine:
Slowly pour the sugar syrup into the roasted besan mixture.
Add cardamom powder and saffron.
Mix quickly and thoroughly. It will thicken.
Set the Mixture:
Immediately pour the mixture into the greased plate.
Level with a spatula and garnish with chopped dry fruits.
Let it cool completely, then cut into squares or diamonds.
