Authentic Kerala Dishes with my personal Touch 😍
Ingredients
Mulayari -Bamboo Rice - 1cup
Water -4-5 cups
Thick coconut Milk -11/2cup
Thin Coconut miLK -7CUPS
Salt -one pinch
Jaggery -400gm - 500 gm
Cahsewnuts -
coconut slices -
Cardamom Powder -1/4tsp
Dry Ginger Powder - 1/4tsp
Method
Soak 1 cup of Bamboo Rice overnight or atleast for 12 hours. Change the water if you are soaking for long time.
Add the soaked Bamboo Rice into the cooker. Add water and cook for 2-3 whistles. Cook until it is really soft.
Take a kadai and add the cooked Bamboo Rice add the jaggery syrup. mix well till it thickens. Stir continuously for 10 – 15 mins on low flame. Add 7 glasses of 2nd and 3rd coconut milk. Stir well.Add a pinch of salt. Once it thickens then add the 11/2 cup of thick coconut milk. Check the sweetness and adjust accordingly. Switch off the heat. Add cumin(optional), cardamom and dry ginger powder.
In a small sauce pan heat ghee. Add coconut chunks fry it. Also fry cashewnuts and dry grapes. Add it on the payasam.
