GARLIC | लहसुन 15 CLOVES GINGER | अदरक 1 INCH FRESH CORIANDER | हरा धनिया 2 TBSP WATER | पानी AS REQUIRED Marination MUTTON | मटन 1 KG GREEN PASTE | हरी पेस्ट 2 TBSP SALT | नमक TO TASTE TURMERIC POWDER | हल्दी पाउडर 1/2 TSP Cooking Mutton OIL | तेल 2 TBSP ONION | प्याज़ 1 MEDIUM SIZED. (CHOPPED) HOT WATER | गरम पानी AS REQUIRED Making Kharda (paste) DRY COCONUT | सुखा नारियल 1/2 CUP (GRATED) GREEN CHILLI | हरी मिर्च 20 NOS. GARLIC | लहसुन 30 CLOVES GINGER | अदरक 2 INCH OIL | तेल 1 TSP CUMIN SEEDS | जीरा A PINCH FRESH CORIANDER | हरा धनिया A LARGE HANDFUL FRESH COCONUT | ताज़ा नारियल 1/4 CUP (GRATED) MINT | पुदीना 8-10 LEAVES WATER | प्याज़ AS REQUIRED Final Cooking GHEE | घी AS REQUIRED OIL | तेल 1 TBSP ONION | प्याज़ 1 MEDIUM SIZE. (CHOPPED) GARAM MASALA | गरम मसाला A PINCH FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED) Method: To make the green paste add the green chilli, garlic, ginger & fresh coriander into a mixer jar & grind it into a fine paste, some portion of this paste will be used in the marinade & the remaining will be added directly into the kharda in the end. Add the washed & clean mutton into a large bowl, add the green paste, salt & turmeric powder & mix well. Now to cook the mutton, set a pressure cooker over high flame, add oil & let it get hot. Add onion, stir well & cook over high flame until the onions turn slightly golden brown. Next, add the mutton & stir, cook over high flame for 4-5 minutes until you start seeing some colour on the mutton. Further add hot water, the water level should be just below half of the mutton, we do not need a lot of stock for this recipe but if you like having mutton soup then you can add more hot water. Put the lid on & pressure cook the mutton over medium high flame for 5-6 whistles, we only have to cook the mutton until it's 80-90% done. Once cooked, switch off the flame & let the cooker depressurize naturally, then open the lid & check the mutton, it should be slightly under done, if you cook it fully at this stage then when you add it to the kharda it will just disintegrate. Strain the mutton pieces & add them into a separate bowl & remove the stock into a separate bowl, cover & set aside until you make the kharda. Set a pan over high flame & heat it up. Once hot, lower the flame & add the dry coconut & dry roast it while stirring continuously until it turns golden brown, then transfer it into a bowl. In the same pan add the garlic, green chillies & ginger, & cook over high flame while stirring until some light golden brown spots start to appear on the chillies. Then add the oil & cumin seeds, stir well & cook for a few more seconds then transfer this mixture into the same bowl & let all the ingredients cool down completely. Next, add the ingredients into a mixer jar along with fresh coriander, fresh coconut, mint leaves, some water & grind it into a paste. For the final cooking, set a kadhai or a flat bottomed vessel over high flame, add ghee & oil, let it get hot. Add the onions, stir well & cook until it turns slightly light golden brown. Next, add the mutton & cook for 1-2 minutes over high flame while stirring continuously. Then add the prepared kharda, stir well & add 3-4 ladles (600-700ml) of the stock & cook over high flame for 8-10 minutes, the masala will get cooked & it will reach a beautiful coating consistency. During this cooking process the mutton will also get fully cooked. Once the masala has reached a coating consistency & the mutton is cooked, taste & adjust salt if required along with garam masala & the remaining green paste that was reserved in the beginning, stir well & lastly add fresh coriander. Your delicious & spicy Mutton Kharda is ready, serve it with your choice of bhakri and rice.
