In a pan add 1 tbsp coriander, 1 tsp fennel seeds, 2 tbsp black pepper corns and 3 whole red chilies. Roast them on pan for 2 minutes. Let it cool and then make a powder of it and keep aside.
In a another pan add 150g Desi ghee and add 6-7 cloves, 2 cinnamon
and 1 Tsp Cumin and cook for a minute. Now add 200g Onions and cook until translucent. Then add 1 kg mutton and cook for 2-3 minutes.
Now add 2 TBSP (Ginger, garlic and green chili paste) and cook for another minutes. Now add 1-1/2 tsp salt, 1/2 tsp turmeric and 1 tsp garam masala and also add the masala powder that we made (add all of it). Now let it cook for 2-3 minutes. Once oil gets seperate from gravy, add 2 cups of water and cook on pressure for 20 minutes.
Once cooked, add fresh coriander, curry leaves and lemon juice and its ready to be served. Enjoy at Sehri with parathas!
