MUTTON PULAO RECIPE || How to make Gosht Pulao || Yakhni Pilau (or Pilaf) Rice Recipe with Meat

In this video, we show you a Mutton Pulao Recipe. This Gosht Pulao (meat pilau) is incredibly delicious and aromatic. Pulau rice is often served in special occasions and variations of Pilau rice (also called Pilaf in some countries) are found in the Subcontinent and the Middle East. A Yakhni (or stock) is first prepared with the meat and it is then used to cook the Pulau rice. This Yakhni Pilau (or Pilaf) Rice Recipe is absolutely delicious when combined with Meat (we used Mutton for this recipe).

To make the Gosht Pulao, we first need to prepare the Yakhni (or Stock). For this recipe you will need:
Mutton Chops with some Ribs (using meat with bones gives the best flavour to the Yakhni).
1 tomato
3 bay leaves
1 full garlic bulb
1 medium-sized onion
1 inch ginger
2 tsp whole coriander seeds (dhania)
1 tsp whole cumin seeds (jeera)
1 cinnamon stick
2 strands mace (javentry)
2 black cardamom (kali elaichi)
2 green cardamom (elaichi)
4-5 cloves (laung)
1 tsp whole black peppercorns (kali mirch)
1/2 tsp fennel seeds (saunf)
1 tsp salt (or to taste)
8-9 cups of boiling water.
Cook for at least 1 hour on low until the meat has cooked.

To prepare the Pulau rice:
1 spoonful ghee
1 small onion (finely chopped) fry until dark brown
2 garlic cloves (grated)
meat from the cooked yakhni (stock)
1 green chili
pinch of turmeric powder (haldi)
1/4 tsp Kashmiri chili powder
salt to taste
3 cups basmati rice (which have been soaked)
6 cups of the Yakhni (stock that we prepared)

Gosht pulao is very popular in India and Pakistan, as well as many Middle Eastern countries. In fact, my mum grew up having this pulao in Tanzania, where the food is influenced by Arab, Pakistani, Indian and East African cuisines, and it is there where she learned this recipe. We absolutely love having Gosht pulao at home, and it is such a grand plate of food that is often served up during special occasions.
