olive oil
brown sugar
yeast

Easy Homemade Bread
1 1/2 C warm Water
2 TBS olive oil or butter
2 TBS honey
2 tsp salt
3 C flour
2 1/2 tsp yeast
Add ingredients into bread maker in order listed. Turn on dough setting. When cycle is complete, remove dough from maker and place into large bread pan. Allow to rise 1 hour. Bake for 35 minutes at 350 F
(Easily made by hand by combining all ingredients and kneading by hand. Allow to rise in bowl 1 hour, then follow directions above after removing from bread maker)
Biscuits
2 C flour
2 tsp salt
1 TBS baking powder
2 TBS butter
3/4 C milk
Mix together dry ingredients. Cut in butter. Pour in milk. Mix together well. Roll into biscuits and bake in 400F oven for 15 minutes.
Creamy Tomato & Spinach Soup
- 1-2 cups shredded cooked chicken
- 2 tablespoons olive oil
- 1/2 onion, finely chopped
-1 lg can diced tomatoes
- 4 cups chicken broth
- 1 cup milk
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- 2 cups fresh spinach, roughly chopped
- Salt and pepper to taste
Instructions
1. In a large pot, heat the olive oil over medium heat.
2. Add the chopped onion and cook until softened, about 5 minutes. Add the dried basil, dried oregano, and red pepper flakes (if using)
3. Stir in the crushed tomatoes and chicken broth. Bring to a simmer.
5. Add the shredded chicken. Simmer for 15-20 minutes to let the flavors meld together.
6. Reduce the heat to low and stir in the heavy cream. Let it gently heat through for a few minutes.
7. Add the spinach and cook for another 2-3 minutes, until wilted.
8. Season with salt and pepper to taste.
9. Serve hot with your favorite toppings.
Tortillas
2 cups all-purpose flour
1/2 teaspoon salt
3/4 cup warm water
3 tablespoons vegetable oil
1. In a large mixing bowl, combine the flour and salt.
2. Gradually add the warm water and vegetable oil to the dry mixture. Stir with a spoon until the dough starts to come together.
3.Transfer the dough to a lightly floured surface and knead for about 1-2 minutes until smooth and elastic.
4. Divide the dough into 8-10 equal portions. Roll each portion into a ball, and then flatten it with your hands or a rolling pin into a thin, round tortilla shape.
5. Heat a non-stick skillet or griddle over medium-high heat. Cook each tortilla for about 1-2 minutes on each side, until lightly browned and cooked through.
