Namkeen Gosht Recipe:
Ingredients:
• Mutton (Gosh) – 500 Grams
• Tel (Cooking oil) - 3-4 Table Spoons
• Pyaz (Onions) - 2-3 Medium Size (sliced)
• Adrak- Laison (Ginger Garlic) Paste - 1 1/2 Table spoon
• Haldi (Turmeric) Powder - 1 Tsp
• Namak (Salt) - 1 Tsp (According to Taste)
• Loung (Clove) - 2-3 No’s
• Elaichi (Cardamom) - 2 No’s
• Shah Zeera (Caraway seeds) - (1/4) Tsp
• Kali Mirchi (Black Pepper) - 4-6 No’s
• Tej Patta (Bay Leaves) - 1 no’s
• Dal Chini (Cinnamon Stick) - 2 inch
• Dhaniya Powder - 1 Tablespoon
• Kali Mirchi (Black Pepper) powder - 2 Tsp
• Hari Mirchi (Green Chili) paste - 1 Table Spoon
• Dahi (Curd) - 1 Cup
• Kasturi Methi Powder - (1) Tsp
• Garam Masala Powder - (1/2) Tsp
• Lemon Juice - 1 medium size
• Dhaniya/kotmir (Coriander Leaves) - (1/4) bunch
• Pani (Water) - 1 Cup ( mutton tenderness)
Procedure:
o In a bowl add washed and drained mutton.
o Now add ginger garlic paste, haldi powder, salt and mix it well and keep aside.
o Now in a Pressure Cooker add oil
o When Oil becomes hot, add onions and saute till it becomes soft (not golden brown).
o Now add the spices whole (Loung (Clove), Elaichi (Cardamom), Shah Zeera (Caraway seeds), Kali Mirchi (Black Pepper), Tej Patta (Bay Leaves), Dal Chini (Cinnamon Stick) and saute it for 10 sec.
o Now add mutton and mix it well, and cook it until mutton color changes.
o When the oil separates, add water and let it take one boil and mix properly, close the pressure cooker lid and keep it on medium flame to take 4-5 whistles or until mutton gets tender.
o Now open the pressure cooker lid (when its pressure is all gone), mix it.
o Now add Adrak- Laison (Ginger Garlic) paste, Haldi (Turmeric) Powder, Dhaniya Powder, Kali Mirchi (Black Pepper) powder, Hari Mirchi (Green Chili) paste and mix well and cook it on medium flame until oil separates, approx. 8-10 minutes.
o Now add dahi (curd) and mix well.
o Now add Kasturi Methi Powder, garam masala powder, lemon juice, chopped coriander leaves and mix properly.
o Now close the lid and keep it on a low – medium flame for 5 mins, till the oil releases
o That’s it friends Namkeen Namkeen Gosh is ready
o Dish out in a bowl and garnish with chopped coriander leaves.
o Serve it with roti, chapatti, paratha or rice.
