PO Box 355 Jersey VA 22481 Buy me a coffee! www.buymeacoffee.com/dollartreedinners Ham & Cheese Stuffed Biscuits You will need: 1 can flakey layers biscuits 8 ounces of leftover ham 4 eggs 1 cup of shredded sharp cheddar cheese Scramble and cook your eggs, set aside to cool. Finely chop leftover ham, mix with eggs and cheese (save some cheese for topping) pull apart each biscuit into a makeshift pocket or clamshell. Stuff with 1/3 cup of ham and cheese filling, stretch biscuit around filling and press to seal, shape back into a biscuit round. Brush with an egg wash and top with a sprinkle of reserved cheese. Bake at 350 degrees for 18 to 20 minutes. To freeze, let cool completely then wrap each in parchment or wax paper, place in a freezer bag and store frozen for 3 to 4 months. Monte Cristo Sandwich 2 slices of sandwich bread Leftover ham slices Dijon mustard & mayo Sliced cheese of choice (I used swiss) Eggs Milk Assemble sandwich by spreading mayo and mustard on each slice of bread. Top with sliced cheese and ham. Mix 1 egg with approximately 1/4 cup of milk per sandwich. Place assembled sandwich in egg mixture and flip to coat on both sides. Fry on medium low heat in a buttered skillet for approximately 3 minutes per side. Continue to cook and stir just until heated through and thickened Cheesy Ham and Broccoli Pasta Bake 1 onion 8 ounces of leftover ham 8 ounces of sharp cheddar 1 bag of broccoli florets 1 packet of country gravy mix 1 & 1/2 cups of low sodium chicken broth 1 cup of milk 12 ounces of egg noodles Ritz crackers or fried onions for topping Dice onion, shred cheese, thaw and chop broccoli (to quick thaw broccoli microwave for 3 minutes, or refrigerate overnight) Sautee onion in butter/oil until softened. Add in leftover ham, chopped broccoli, broth, milk, and gravy powder. Let thicken slightly then add in half of your cheese. Mix until all of the cheese is fully melted then stir in the remainder of the cheese. Set this mixture aside. Boil egg noodles for 5 minutes. Drain, mix with prepared cheese sauce, pour into a baking dish and top with crushed ritz, chips, or fried onions. Bake at 350 degrees for 20 minutes and enjoy!
