Speedi Meals are so fast and easy to make. In this recipe, I made mushroom brown rice with chicken leg quarters and it came out delicious.

Ninja Speedi Mushroom Brown Rice w/ Chicken Leg Quarters
Ingredients:
Chicken Leg Quarters – 3 (2 lb)
Marinade:
Garlic Powder – 1/2 tsp
Onion Powder – 1/2 tsp
Paprika – 1 tsp
Black Pepper – 1/2 tsp
Salt – 1 tsp or as needed
Lemon Juice – 1/2 Tbsp
Oil – 1/2 Tbsp
Brown Rice – 1 cup (washed and drained)
Mushrooms – 2 cups sliced
Cream of Mushroom – 1 can (10.5 oz)
Chicken Stock – 2 cups
Onion – 1 small chopped
Garlic Powder – 1/2 tsp
Salt – as needed
Black Pepper – as needed
Oil – 1 Tbsp (separated)
Instructions:
1. Marinate chicken leg quarters with all the spices under marinade.
2. Coat the chicken with the seasonings all over including under the skin for evenly seasoned chicken. Set aside for 30 minutes (if time permits)
3. With the Speedi knob on Air Fry setting, turn on Sear/Saute on High
4. Add 1/2 Tbsp of oil and once hot, add sliced mushrooms and season with salt and black pepper. Saute until all water is absorbed and mushrooms are slightly fried.
5. Remove mushrooms and add chopped onions. Add 1/2 Tbsp more of oil if needed.
6. Once onion starts to brown turn off Sear/Saute mode.
7. Add brown rice, chicken stock, 1/2 tsp garlic powder, cream of mushroom and stir
8. Place the tray on higher position and oil the tray (optional)
9. Place the chicken leg quarters skin side down
10. Set the Speedi knob on Rapid Cook
11. Cook at 375 °F for 20-25 minutes on Speedi Meals setting. It will take few minutes before timer starts.
12. Flip the chicken after 13 minutes and continue to cook
13. Chicken in this video was done after 23 minutes. Check and make sure internal temp is at minimum 165 °F.
14. Remove the tray carefully and rest the chicken while rice continues to cook
15. Mix the rice and check for doneness. I continued to cook the rice for 5 minutes on Steam mode for my preferred doneness.
16. Check the rice and if cooked to your preferred liking, add the sauteed mushrooms and mix. Total cook time was 28 minutes plus saute time.
17. Serve warm.
