No-Bake Cheesecake - Easy Recipe & No Oven Required
Crust:
1 ¼ cup crushed graham crackers
¼ cup granulated sugar
⅓ cup melted butter
Combine all ingredients in a medium bowl and gently press into a pie dish. Set aside.
Cheesecake filling:
8-oz cream cheese (softened)
14 oz sweetened condensed milk
⅓ cup lemon juice
1 teaspoon vanilla extract.
Using a hand mixer, blend cream cheese and add sweetened condensed milk to combine. As the mixture becomes smooth, add lemon juice and blend well to a very smooth consistency. Add vanilla extract and mix gently until extract is no longer seen. Pour the mixture into the prepared crust. Place in the refrigerator for 2-3 hours or until the mixture has set and is firm to the touch. Top with fruit or enjoy plain.
