TAAZE MATAR KI KACHORI - Winter mein ताज़े हरे Matar की कचौरी is a must! Green chillies (less spicy & cut into diagonally) हरी मिर्च For Filling 2 tbsp Ghee, घी 500-600 gms fresh Green peas, हरी मटर Prepared Ginger Green chilli paste, अदरक हरी मिर्च का पेस्ट Salt to taste, नमक स्वादअनुसार 1 tsp Black peppercorns, crushed, कुटी हुई काली मिर्च Little water, पानी For Dough 1 cup Refined flour, मैदा 1 cup whole Wheat flour, गेहूं का आटा 1 tbsp Gram flour, बेसन Salt to taste, नमक स्वादअनुसार 2-3 tbsp Ghee, घी Water as required, पानी For Tempering 2 tbsp Ghee, घी A pinch of asafoetida, हींग 1 tsp Cumin seeds, जीरा ½ tsp Fennel seeds, सौंफ़ 1 tbsp Coriander seeds, crushed, कुटे हुए धनिये के बीज Prepared kachori filling, तैयार किया हुआ कचौड़ी का मिश्रण 1 tbsp Tender Coriander stems, finely chopped, धनिये के डंठल 12-15 no. Raisins, chopped, किशमिश For Assembling Sweetened curd, मीठा दही Prepared kachori, तैयारी की हुई कचौड़ी A pinch of degi red chili powder, देगी लाल मिर्च पाउडर Tamarind chutney, इमली की चटनी Green chutney, हरी चटनी A pinch of chaat masala, चाट मसाला A pinch of roasted cumin powder, भुना जीरा पाउडर Pomegranate pearls, अनार के दाने Nylon sev, सेव Khari boondi, खारी बूंदी Other Ingredients Oil for frying, तलने के लिए तेल For Garnish Coriander sprig, धनिया पत्ता Process For Ginger Green Chili Paste ● In a mortar pestle, add ginger, green chillies and grind into a coarse paste. ● Keep it aside for further use. For Filling ● In a pressure cooker, add ghee, once it's hot, add fresh green peas, prepared ginger green chili paste, salt to taste and cook for 2-3 minutes. ● Add crushed black peppercorns, little water and mix well. ● Cover it with the lid and cook until 2-3 whistles on medium flames. ● Keep it aside to depressurize the cooker. ● Mash the green peas with the help of spatula or masher and keep it aside for further use. For Dough ● In a parat or mixing bowl, add refined flour, wheat flour, gram flour, salt to taste, ghee and rub it well. ● Add water as required and knead it in firm dough. ● Cover it with damp cloth and keep it aside for resting. For Tempering ● In a non-stick kadai, add ghee, once it's hot, add a pinch of asafoetida, cumin seeds, fennel seeds, crushed coriander seeds and let it splutter well. ● Add Prepare kachori filling, tender coriander stems and cook until mixture turns dry. ● Add raisins and give it a good mix. ● Keep it aside for further use. For Matar Ki Kachori ● Divide the dough into small lemon size balls, flatten it with the help of a rolling pin, stuff with the prepared filling mixture and seal the edges properly and make it tikkis and coin size balls. ● Take a kadai, add oil, once it's medium hot, add prepared kachoris and fry them until light brown in color on low flames. ● Transfer it into the absorbent paper and keep it aside for further use. ● Transfer it into the serving plate and serve hot with green chutney & tamarind chutney. For Ghughra ● Divide the dough into small lemon size balls, flatten with the help of a rolling pin, stuff the prepared filling mixture, seal the edges and give it a desired shape. ● Take a kadai, add oil, once it's medium hot, add prepared ghughra and fry them until golden in color on low flames. ● Transfer it to an absorbent paper and keep it aside for further use. ● Transfer it to a serving dish, serve hot with green chutney and tamarind chutney.
