Let's St!r up this nostalgic NIHARI in the instant pot! It is sure to take you back to memories of your childhood and the delicious Nihari your mom or grandma use to make back home! Ingredients:
2 lb beef shank
1 lb bones
1 cup flour
5 cup water
½ onion cubed
2 tbsp tomato paste
1 pack Nihari masala
1 piece sliced ginger
4 sliced green chilies
1/2 sliced onion for tarka
Method:
1. Put your instant pot on sauté mode and fry half an onion cubed to ¼ cup of oil for 2-3 minutes.
2. Add meat and bones to the fried onion and fry for another 2-3 minutes until meat is no longer red/pink.
3. Add tomato paste and stir well. Then add the Nihari masala and mix well.
4. Add 4 cups of water and stir the meat in the water to ensure the spices are mixed well.
5. Close the lid of the instant pot and manual pressure for 20 minutes. Let the pressure release naturally.
6. Open the lid, put the instant pot on sauté mode and let the curry cook.
7. On the side, take our flour, add the remaining 1 cup of water and make a paste.
8. Add the flour paste slowly to the instant pot and continue to stir well. Let it cook for 5-10 minutes so the curry can thicken to your preferred consistency.
9. Add some of the ginger, green chilies, and coriander into the curry.
10. On the side, fry the remaining ½ sliced onion in oil and once light brown, add to the curry. You can keep some onions aside for garnish, I add them all in the Nihari to enrich the flavours of my gravy.
11. Serve hot and garnish with remaining ginger, coriander, and green chilies.
