Dalma, the soul food of every Odia is nothing but a simple delicious dish with high protein. Combine with rice, that will be most comforting lunch on a day when you don’t want to have non-veg. This lentil vegetable stew has almost no-oil. So undoubtedly it falls in the healthy category. Here's a recipe for Odisha Dalma : Ingredients: * 1 cup toor dal (pigeon peas),/ moong dal or toor dal and channa dal washed and soaked for 30 minutes * 1/2 cup raw banana, peeled and diced * 1/2 cup raw papaya, peeled and diced * 1/2 cup pointed gourd, cleaned and diced * 1/2 cup potato, peeled and diced * 1/2 cup pumpkin, peeled and diced * 1/2 cup yam, peeled and diced * 1/2 cup beans, cut into 2-inch pieces * 1/2 cup taro, peeled and diced * 1/2 cup brinjal (eggplant), diced * 1/2 cup drum stick, diced * 1 small tomato, chopped * 3/4 cup grated coconut(optional) * 1 bay leaf * 1 table spoon grated ginger and green chilli * 1 teaspoon turmeric powder * 1 teaspoon sugar (optional) * Salt to taste * For the spice powder: * 1 tablespoon cumin seeds * 2 dry red chilies * For tempering: * 1 teaspoon panch phoran (five-spice mix)/ Jeera * 1 dry red chili * 2 teaspoons grated ginger/sliced onions * A pinch of asafoetida * 2 tablespoons ghee/oil Instructions: * Make the spice powder: Dry roast cumin seeds, dry red chilies. Let them cool slightly, then grind them into a coarse powder using a grinder or mortar and pestle. * Cook the dal: In a pressure cooker, combine the soaked toor dal and channa dal, turmeric powder, bay leaf, and salt , vegitables, 5 cups of water. Pressure cook for 1whistle and wait for the releaseing of steam. * Make the tempering: Heat ghee in a small pan. Add panch phoran/ jeera, dry red chili, grated ginger/ onion, and asafoetida. Let them splutter. * Add spice powder: Stir in the ground spice powder and cook for another 2-3 minutes. * Combine and serve: Pour the tempering over the dalma. Garnish with chopped coriander leaves and serve hot with steamed rice or roti. Tips: * You can adjust the amount of vegetables and spices according to your preference. * If you don't have a pressure cooker, you can cook the dal in a pot on the stovetop. It may take longer. * For a richer flavor, you can add a spoonful of grated coconut to the dal while cooking. * You can also add a pinch of hing (asafoetida) to the dal while cooking.
