Oil Down, Trinidad Breadfruit Oil Down, Simmer in Coconut Milk

Oil Down is a comfort food in Trinidad, but it’s Grenadas National Dish. It’s a combination of breadfruit, provision, salted meat simmer in coconut milk and Dasheen Leaves, loads of flavor! It’s absolutely delicious!! Ingredients 1-2 1bs Salted Pigtail (or any salted or unsalted meat kind of your choice) Add enough coconut milk to cover ingredients 1 breadfruit 8 small Dasheen leaves or more Okra (optional) 1 corn (optional) 2 cups dice pumpkin or 1/2 1b 1 small carrot 2 twigs scallion & thyme Shadow Beni/ Culantro 3 gloves garlic Pimento peppers 1 tbsp all purpose seasoning or season to taste 2 tbsp cooking oil Flour & water for dumplings (optional) Allow to simmer under low heat Use recipe as a guide, taste and make adjustments.
