A dreamy ASMR MascarCoffee Cream Cheesecake —melts in your mouth with soothing piano sounds! ☕🍰
▷Ingredients:
For the first layer:
Cream cheese: 250g
Sugar: 50g
Eggs: 2
Concentrated Coffee Liquid: 10g
Heavy cream: 170g
Cornstarch: 8g
For the second layer:
Mascarpone cheese: 110g
Egg yolk: 20g
Sugar: 30g
Gelatin: 5g
Heavy cream: 160g
Coffee-flavored Liqueur: 10g
Cocoa powder (as needed)
▷Instructions:
For the Coffee Cheesecake:
Soften the cream cheese at room temperature and mix it well with granulated sugar.
Add the eggs one by one, mixing thoroughly after each addition.
Fold in the whipped cream and mix well.
Add the cornstarch and coffee, then mix until well combined.
Pour the mixture into a 20×8 cm loaf pan and bake at 220°C for 25 minutes.
Let it cool completely.
For the Coffee Tiramisu:
Mix the egg yolks with sugar and heat over a bain-marie, whisking continuously until the temperature reaches 65°C.
Soak the gelatin sheet in cold water, then add it to the egg mixture and let it dissolve.
Mix the mascarpone cheese with whipped cream and coffee.
Add the egg mixture to the mascarpone mixture and combine well.
Pour the topping over the completely cooled cheesecake and refrigerate for 3-4 hours before serving.
Cover the cake with a dusting of Cocoa powder.
