Recipe
1 lb shrimp cleaned, add lemon juice and salt and pepper
2-3 tablespoons olive oil
1 1/2 teaspoon salt
6-8 brussel sprouts sliced thin
1 tomatoe diced
1 tablespoon grated ginger
1-2 cloves of garlic grated
1 large carrot cut in small strips
1 cup califlower cutup
3-4 tablespoons water
Chopped parsley to garnish

Add 2 tablespoons olive oil to hot pan, add shrimp and cook for 4-5 minutes, remove from pan and set aside. Add 1 tablespoon olive oil to the same pan, add chopped onions cook about 1 minute until tender, add ginger and garlic, cook for an additional minute, add carrots, califlower, and brussel sprouts, tomatoes, red peppers, salt and pepper to taste and thyme.
Simmer covered for 4-5 minutes.
Return shrimp to pan and stir everything together. Done!!
Garnish with chopped parsley and serve over basmati rice!! Enjoy
