This week recipe - 𝗣𝗮𝗻𝗱𝗮𝗻 𝗞𝘂𝗶𝗵 𝗟𝗼𝗺𝗽𝗮𝗻𝗴 班兰碗仔糕 This little nyonya kuih rich in pandan aroma and have a springy and soft texture. Best eaten with freshly shredded coconut. We use porcelain tea cups to make this bite-size kuih, which is ideal for home parties and gatherings.
This recipe can make up to 40pcs of kuih lompang
🍴Ingredients
Pandan leaves 班兰叶– 4 pcs (large size)
Water水 – 200ml
Pandan juice 班兰汁 – 200ml (Blend and strain for pandan juice 搅拌成泥后过滤挤出班兰汁)
Rice flour 粘米粉 – 100g
Tapioca flour 木薯粉 – 50g
Salt 盐 – ¼ tsp
Pandan juice 班兰汁 – 200ml
Alkaline water 碱水 – ½ tsp
Water 水 – 250ml
Sugar 糖 – 130g
Shredded coconut 嫩椰丝 – 100g
Salt盐 – ¼ tsp
Pandan leave班兰叶 – 1 pc
