Place half the almond milk (i.e. half a cup) in a small bowl. Add the gelatin and mix. Set aside to bloom. 2. To a small pot, add the remaining almond milk, heavy cream, sweetener, vanilla extract, and salt. If adding alcohol, add a splash now. Mix. 3. Set the pan over low heat and let the mixture warm. It must not BOIL. You can heat it until 125°F/51°C or until you can only keep your finger in the milk for 3-4 seconds before it gets too hot to handle. 4. Remove the mixture from the heat and add the gelatin mixture. Stir until it is completely dissolved. 5. Pour the milk through a strainer into little glass containers or ramekins. 6. Refrigerate for 4-6 hours, overnight is best. 7. Remove from the fridge, top with fruits, caramel, honey, or agave syrup. 8. Enjoy! TIP: if you decide to use ramekins and want to remove the panna cotta before serving, lower the ramekin into a warm water bath for about 30 seconds. Then flip the ramekin onto a plate to release it.
