White Chocolate Ganache Drip: Place 300 grams white chocolate in a bowl. Heat 100 grams (you have to weigh this the same as the chocolate) heavy cream (35% fat) in the microwave or in a sauce man until almost boiling, nice and steamy. Pour over white chocolate and stir until completely melted. Let cool to room temp before placing in piping bag or coloring. Adjust the amount of cream you use to fit your liking, more cream means a runnier ganache, less cream means more stiff. Ganache should NOT be hot when adding to cake, and it really helps if you cake has been chilled for 20-30 minutes before adding ganache to help prevent the drips from slipping down to the bottom.
