Composed of: a shortcrust pastry with amaretto, peaches with thyme, a filling of peaches / amaretti and cocoa, a mascarpone cream; this single portion is inspired by a typical dessert of the Piedmontese tradition, which I wanted to re-propose in a more modern jacket, while maintaining the classic flavors in full respect of the traditional dessert.
