Y'all, this one is dangerous! I have eaten half the loaf while editing and posting this. Hubby isn't a huge peppermint fan so this was only okay to him. I love peppermint and to me it was perfect. Want it to be just chocolate, simply omit the peppermint extract.
Recipe
4c. bread flour
1 1/2c. warm water
1/2c. active starter
1 1/2t. salt
1/3c. sugar
1c. chocolate chips
1/3c. cocoa powder
2t. peppermint extract. Reduce to one if you don't want a strong peppermint flavor.
Mix all ingredients like a standard sourdough. Complete three stretch and folds 30 minutes between each round. Bulk ferment in the fridge up to 36 hours. We did 16 hrs.
Preheat oven and put your cast iron lidded pot in to heat for 1 hr. Bring your bread out to get a little warmer prior to baking. I like to allow it 1-2 hours on the counter before baking.
Place bread on parchment paper and score the top.
Bake at 475 for 25 minutes with the lid on. Remove the lid and cook for 25 minutes. Make sure to put a baking sheet below your pot to ensure the bottom doesn't get too cooked.
Let this cool a little before you cut it.
