So you want to make Häagen Dazs Strawberry Cheesecake at home....

So this is a high fat recipe but you need it here, you need that strong cream cheese taste to come through, the tart strawberries and the buttery graham craker base........ 🤤🤤🤤🤤
Enough talking, what you will need to make this EPIC ice cream is:
Strawberry Sauce:
500g Ripe Strawberries 🍓
100g Sugar
15g Lemon Juice
(Cook down and strain through fine mesh sieve, store in the fridge over night)
Cheesecake Base:
250g Cream @ 33% fat
125g Cream Cheese @ 27% fat
500g Milk 🥛 @ 2% fat
160g Sugar
40g Dextrose
65g Skimmed Milk Powder
(Heat gently to 80c/170f if using stabilizer and store in the fridge over night)
Cheesecake crumb pieces:
85g Butter
140g Biscuit crumb either graham crumb or digestive
15g Sugar
(Bake at 360c for 10 mins and chill for 24 hrs in the fridge)
Once al the parts are done, the next day you can churn and load the tubs, adding in the cheesecake base and strawberry sauce as you go. Stir it together and finally freeze for 6-8 hours or eat there and then 😂.
