Comfort food at it’s best! This is one of the meals my mom prepared for us often when we were growing up, she always served it with beans and freshly made flour tortillas and it always hit the spot. She prepared inexpensive dishes and turned them into a feast…I have continued the tradition. When you are hungry this dish will definitely satisfy, it is very easy to prepare. I change it around, sometimes I add bell peppers instead of jalapeños, but my Ron loves the kick from the jalapeños and so do I, I don’t think it’s hot, but bell peppers can be a simple substitute.
