Pickled Veggies | Quick Pickles - Cucumber - Carrot - Gooseberry - Lime - Pineapple

Ingredients Cucumber - 2 nos Carrot - 2 nos Pineapple - 2 nos Gooseberry - 10 or 15 nos Curry leaves - 8 or 9 sprigs Birds eye chilli - 25 to 30 nos Water 1 ltr Salt - 2 or 3 tbsp Method Firstly we have to peel cucumber and set aside. Then peel carrot and cut it into long pieces Then we peel the outer cover of the pineapple Then we have to slice the pineapple and keep aside. Now wash and clean the gooseberry . Drain and set aside. Take a pan add salt and hot water . Add cleaned gooseberry and soak for 10 to 15 minutes. Again take a pan add salt and water Then add lemon and soak for few minutes Then we have to take a glass container add sliced pineapple slices, curry leaves and birds eye chilli Take another glass container add gooseberry, curry leaves and birds eye chilli Again take another container add cucumber slices ,curry leaves and birds eye chilli Take a big container add chopped carrot ,curry leaves and birds eye chilli . Then cut the lemons into small pieces Then put this lemon into a glass jar . Then add birds eye chilli and curry leaves Take a pan add water ,vinegar and salt Boil them well. Again we add boiled vinegar water into all container , and closed with a lid. Shake well and set aside.
