Pineapple Bread
4 eggs
1 cup Canola Oil
2 cups crushed pineapple, in heavy syrup, with juice
3/4 cup water
2-4 Tablespoons pineapple extract (taste preference)
3 cups white sugar
4 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
Sparkling sugar, for the top, optional
Preheat oven to 350°.
Beat eggs slightly. Mix in the next four ingredients in the order given. Stir in the sugar, and then the flour, baking soda, and salt.
Generously grease two 9“ x 5“ loaf pans and line the bottoms with parchment paper. Evenly divide the batter between the two loaf pans. Sprinkle the top of the batter generously with the sparkling sugar, if desired.
Bake 50 minutes or until barely firm on the top center of each loaf.
