I know that so many of you are already asking for my Chinese New Year recipes and it’s finally here🧧! Today we're making the halal version of Poon Choi; also known as the Big Bowl Feast that is full of expensive ingredients which is a symbol of prosperity, making it a significant part of festive celebrations in Chinese culture. Since there's a lot of Ingredients for Poon Choi, Shogun knive & scissors have been making my life easier to cut and slice.
Ingredients:
✏️Prawns – 8nos (trimmed)
✏️Abalone – 1 can (braised)
✏️Broccoli – 1 head (cut out to florets)
✏️Sea cucumber – 300 g (pre-soaked)
✏️Dried Scallops – 8 nos (soak in hot water for 3-4hrs)
✏️Smoke duck – 1 nos (seared, sliced)
✏️Dried mushroom - 8 pcs (save the mushroom soaking liquid)
✏️Chinese long cabbage – ½ nos (cut the stem out, and peel out each layer of cabbage)
✏️Dried oyster – 8nos
✏️Radish - 1nos (cut to ½ inch thickness)
✏️Lotus roots - 1 nos (cut to +- 1.5cm thickness)
✏️Ginger - 40gm
✏️Garlic - 4 Cloves
✏️Chicken stock - 500ml
✏️Abalone sauce – 2tbsp
✏️Dark Caramel sauce – 1tsp (for colour)
✏️Salt – to taste
✏️Oil – 2tbsp
