This video demonstrates how to get the best parts of the tail for main dish preparations. It’s worth noting that Oxtails are not from an Ox. They have been in the past because there were a lot of ox's around. An Ox is a castrated male steer that is used for labor purposes. The Oxtails in today’s market come from male steers raised in feedlots. It’s also worth noting that if you buy whole tails rather then precut tails you will save a fair amount of money on the purchase price. The other benefit is that you are guaranteed to get the best parts of the tail. The thinner parts of the tail are better suited for additions to soup & stews etc. and not necessarily for main dish serving.
