My wife has been wanting me to make these potato wedges on the griddle for a while now... after she fell in love with the bacon cheese fries at Texas Roadhouse with their ranch dressing. So of course, I had to make my version - these bacon cheese potato wedges on the Blackstone with a quick homemade ranch dipping sauce.
These griddle potatoes were fantastic, and we'll definitely make these potato wedge "fries" as griddle appetizers again!
