Homemade Marshmallows:
1. Combine 1 cup of filtered water and ½ cup of Gelatin in a mixing bowl and let it sit to bloom (just let the water absorb the gelatin, unstirred) while you heat the other ingredients.
2. Combine 3/4 cup of water, 350g honey, splash of vanilla, and pinch of salt in a pot over medium heat on the stove, and stir to combine. (Do not let it come to a boil.)
This is when you'd want to line a pan with parchment paper because after the mixture has been whipped, it becomes stiff fairly quickly.
3. Start mixing gelatin on low in the mixer and slowly pour in the honey mixture.
4. Gradually increase to high speed and mix for about 10 minutes or until it looks mallowy.
5. Quickly scoop into a parchment lined pan and let them sit for a few hours, then cut into squares.
Optional: brush them with arrowroot powder to prevent them from sticking together.
personal notes:
I don't bother with a stove I just add 3/4 cup boiling water to the honey mixture and mix until combined, it works wonders and is a lot less work and hassle then having to deal with a stove.
