Today, I'm excited to share with you a no-yeast, no-oven, gluten-free Ragi Oat Bread recipe! This wholesome bread is crafted from nutrient-dense ingredients like finger millet (ragi), oats, and flaxseeds, making it not only gluten-free but also packed with essential nutrients. It’s incredibly easy to make and perfect for those who love healthy baking. Whether you're using it for sandwiches or topping it with fruits and nut butter for a delicious snack, this bread is sure to satisfy. Ingredients: 1 ½ cups oat flour 1 ½ cups ragi (finger millet flour) ¼ cup flaxseeds ½ cup water (for flax gel) 1 ½ tsp salt 1 tbsp corn starch (or arrowroot starch/ potato starch/ rice flour) 2 tbsp jaggery powder (or any sweetener of your choice) ¾ tsp baking soda 1 tbsp oil 1 cup yogurt ¼ cup water (for the dough) Mixed seeds (pumpkin, sunflower, hemp) for topping Milk for brushing Instructions: 👉Make Oat Flour: Start by blending oats into a fine powder to make oat flour. Set it aside. 👉Prepare Flax Gel: Grind ¼ cup flaxseeds into a fine powder. Transfer this flaxseed powder to a bowl, add ½ cup water, mix well, and let it rest for 10 minutes until it thickens into a creamy, jelly-like consistency. 👉Preheat the Pan: While the flax gel rests, preheat a large pan by adding some salt to the bottom, placing a small stand inside, and covering it with a lid. Heat the pan on low-medium heat. 👉Mix Dry Ingredients: In a large mixing bowl, combine the oat flour, ragi flour, salt, corn starch, jaggery, and baking soda. Mix well. 👉Incorporate Wet Ingredients: Add the flax gel to the dry ingredients. The flax gel acts as a binder and makes the bread soft and moist. Then, add the yogurt and mix everything thoroughly. 👉Form the Dough: Gradually add about ¼ cup water to the mixture, mixing until a soft dough forms. The dough should be just combined, not kneaded. 👉Prepare for Baking: Transfer the dough to a parchment paper-lined loaf pan. Press it lightly to settle the dough in the pan. Brush the top with milk and sprinkle mixed seeds like pumpkin, sunflower, and hemp seeds. 👉Bake: Place the loaf pan in the preheated pan, cover it with the lid, and cook on low-medium heat for about 50-60 minutes. Check the bread by inserting a toothpick into the center; if it comes out clean, the bread is ready. 👉Cool and Serve: Allow the bread to cool completely before slicing. This healthy, homemade ragi oat bread is perfect for toasting, making sandwiches, or pairing with soups, dals, and curries. 👉Alternatively you can bake in the oven at 180°c/ 350°c for 55-60 min.
