Ingredients:
(serves 3-5)
2 zucchinis sliced into rounds
2 eggplants sliced into rounds
3 tomatoes sliced into rounds
2 tbsp extra virgin olive oil
500 ml tomato sauce
Minced parsley
A pinch each of oregano, thyme & rosemary
Salt to taste
Method:
1. Pour tomato sauce into the base of a baking dish or casserole.
2. Arrange the slices of zucchini, eggplant and tomato alternating them.
3. Sprinkle the herbs and salt over the top and drizzle some olive oil.
4. Bake in a pre heated oven at 350F for 30-45 minutes.
