鴻運年糕
材料:
糯米粉300克
澄麪粉2湯匙
片糖5片(3塊淺色,2塊深色)
紅棗一粒
處理:
1. 洗乾淨片糖。
2. 在煲內加入水600毫升,加入片糖,用大火煮溶。
3. 在大碗內加入糯米粉150克,加入澄麪粉2湯匙。
4. 片糖已煮溶及攤凍,分段加入大碗內攪勻。
5. 掃油在玻璃碗內。
6. 粉漿已攪勻,用隔篩隔去顆粒。
7. 戥一戥,讓年糕中的氣泡流出。
8. 在年糕上封上錫紙。
烹調:
1. 大火煲滾一鑊水。
2. 大火蒸年糕一小時。
3. 與此同時,在另一邊煲好滾水,以便每20分鐘就要加入滾水繼續蒸。
4. 年糕已蒸了一小時,放紅棗在年糕上。
5. 完成。
6. 年糕在室溫攤凍,放入雪櫃儲存。
7. 放雪櫃冷藏36~48小時。
8. 年糕,可煎香食用。
Rice cake with fortune
Ingredients:
Glutinous rice flour 300g
Wheat starch 2 tbsp
Slab sugar 5 slices(3 slices you have to choose the lighter in color, and 2 you have to choose the darker in color)
Red date 1 No.
Preparation:
1. Rinse the slab sugar.
2. Put water 600ml into pot. Heat up with slab sugar at high flame.
3. Put glutinous rice flour 150g into a big bowl. Add wheat starch 2 tbsp.
4. Slab sugar has been melted in boiled~up water and cooled down. Pour into the big bowl by several times. Mix well.
5. Brush little oil in a glass bowl.
6. Flour syrup has been mixed well, use a filter to remove particles in the rice cake.
7. Get out the air in the rice cake by hitting the cake tray onto the working table carefully. This is to help releasing the air bubbles in the rice cake.
8. Cover up the rice cake with aluminum foil.
Steps:
1. Heat up a wok of water at high flame.
2. Steam the rice cake at high flame for an hour.
3. Boil up a wok of water on the other side at the same time, since boiled~up water will be added to the wok for every 20 minutes during the steaming process.
4. Rice cake has been steamed for an hour, put the red date on top of rice cake.
5. Complete.
6. Rice cake is to be cooled down in room temperature. Put in refrigerator for storage.
7. The rice cake, store in refrigerator for 36~48 hours.
8. The golden rice cake can be consumed after frying well.
