This week I made a bento with rice croquettes, gapao rice, and fried squid.
I made the rice croquettes in the easy version and they were quite tasty. The cheese hardens when you pack it in the lunch box, so it's poin to add good cheese!
We love string cheese, so I put in a large portion.

【Ingredients】
◻︎ Rice croquettes
About 600g rice
3 T ketchup
1 t consommé
Salt and pepper
cheese to taste
*Batter*
1 egg
4 T flour
2 T water
Bread crumbs as needed
A dash of flour
◻︎ Chicken Gapao Rice
1 chicken breast
Vegetables as needed
2 t garlic cloves
2 t ginger
1.5 T fish sauce
3 T oyster sauce
1 t sugar
◻︎Simmered Hijiki seaweed
Hijiki (dried hijiki seaweed) ... 20g
1/3 carrot ... (about 50g)
1/2 sheet of deep-fried tofu
1 T oil
Dashi broth ... 150ml
2 T soy sauce
1 1/2 T sugar
1 T mirin (sweet cooking sake)
