通常我喜歡司康同時搭配奶油與果醬,不過蘭姆葡萄口味我覺得奶油就夠了,因為蘭姆葡萄本身含水又有甜度,還有濃濃的蘭姆酒香氣,不需要再加果醬來搶戲,單配有鹽或無鹽奶油都好吃!阿不過最好是再來一杯熱咖啡啦! . I usually like having scones with both cream and jam, but for rum raisin flavor, just butter is enough! The raisins are already juicy and sweet, plus that rich rum aroma really stands out—no need for extra jam to steal the show. Whether it’s salted or unsalted butter, it’s delicious either way! Oh, but of course, a hot cup of coffee makes it even better! . 食材 Ingredients▼ 高筋麵粉 150 g bread flour, 150 g 全麥麵粉 100 g whole wheat flour, 100 g 無鹽奶油 75 g unsalted butter, 75 g 全蛋 1 顆 egg, 1 無糖優格 62 g plain yogurt, 62 g 蜂蜜 40 g honey, 40 g 速發酵母 2.5 g instant yeast, 2.5 g 鹽 3 g salt, 3 g 酒漬葡萄乾 70 g rum raisin, 70 g . ■中文完整圖文食譜: https://bit.ly/4jAu56i . 步驟 Instructions▼ . ●Making the Dough 1. In a mixing bowl, add whole wheat flour, bread flour, yeast, and salt. 2. Mix well. 3. Add cold butter cubes. 4. Let the butter get coated with flour. 5. Cut the butter into the flour using a pastry cutter or your fingers until it becomes crumbly. 6. Add egg, yogurt, and honey. 7. Gently combine dry and wet ingredients with a fork. 8. Stir until just combined. 9. Add rum raisins. 10. Mix well. 11. Knead the mixture by hand until it forms a dough. 12. Cover with a damp cloth and let it stand in an enclosed space for 30 min. . ◆30 min. later◆ 13. Remove the dough from the bowl. 14. Transfer the dough to a baking mat. 15. Slightly press the dough and roll it out into a 1.5 cm thick rectangle. 16. Fold the two sides of the dough towards the center. 17. Roll out the dough into a 1.5 cm rectangle again. 18. Fold two sides of the dough towards the center again. 19. Roll out the dough into a 1.5 cm rectangle again. 20. Wrap the dough and freeze it for 15 min. . ◆15 min. later◆ ●Preheating the Oven at 400℉/200℃ 21. Remove the dough from the freezer. 22. Use a scone cutter to cut out as many circles as possible. 23. Place on the prepared baking sheet. 25. Re-roll the rest of the dough and shape it into a rectangle. 26. Cut out more circles. 27. Repeat until all the dough has been used. 28. Brush a thin layer of egg wash on top. 29. Transfer to the preheated oven. 30. Bake at 400℉/ 200℃ for 15 min. . ◆15 min. later◆ 31.
