Sabzi Polo (green herb rice), Kuku Sabzi (Persian herb frittata), and Mahi (typically white fish) are delicious traditional Iranian dishes that can be enjoyed year-round but are commonly eaten during the first day of the Persian New Year (Nowruz). Enjoy!
Sabzi Polo (سبزی پلو)
4 cups White Rice, long or extra-long Basmati
2.5 oz Persian Leek (تره), fresh chopped
2 oz Parsley (جعفری), fresh, chopped
2.5 oz Cilantro (گشنیز), fresh, chopped
2.5 oz Dill (شوید), fresh, chopped
1/2 oz Fresh Garlic (سیر تازه), chopped
2 tsp Fenugreek (شنبلیله), dry
2 tsp Liquid Saffron (زعفران مایع)
4 tbsp Butter
- Salt and Black Pepper, to taste
Kuku Sabzi (کوکو سبزی)
5 Eggs, large
1 oz Persian Leek (تره), fresh chopped
1/2 oz Parsley (جعفری), fresh, chopped
1 oz Cilantro (گشنیز), fresh, chopped
1 oz Dill (شوید), fresh, chopped
1/3 oz Fresh Garlic (سیر تازه), chopped
1/2 tsp Fenugreek (شنبلیله), dry
2 tsp Turmeric (زردچوبه)
1/2 Onion, small
2 tbsp All Purpose Flour
- Salt and Black Pepper, to taste
- Grapeseed oil or other high temperature cooking oil
White Fish - Mahi Sefeed (ماهی سفید)
5 White Fish fillets, fresh
Dry Rub
1.5 tsp Salt
1/2 tsp Black Pepper
1.5 tsp Persian Hogweed (گلپر)
- Grapeseed oil or other high temperature cooking oil
Sides
- Pickled Garlic (Seer-Torshi - سیرترشی)
- Sour Orange (Narenj – نارنج)
