Sausage Pumpkin Pasta Bake 1# pasta of your choice (I used ziti) 1# Italian sausage (homemade if possible) 1 onion, diced 3 garlic cloves, minced 15 ounce can of pumpkin purée (NOT pie filling mix) 8 ounces cream cheese 1/2 tsp red pepper flakes 1/2 tsp ground black pepper 1 tsp salt 1 tsp oregano 1 c milk 1 1/2 c freshly grated Parmesan (1 c for IN the pasta and 1/2 c for ON TOP of the pasta) 1/3 c bread crumbs Cook pasta in boiling salted water (like the ocean, salty) until almost done. Meanwhile…. in a large saucepan, cook Italian sausage until browned and add diced onion; cook until onion is transparent. Add garlic, pumpkin, cream cheese, pepper flakes, black pepper, salt, oregano and milk and mix well until the cream cheese melts and everything is incorporated. Remove from heat. Drain pasta and add the sausage/pumpkin mixture to the pasta, along with 1 cup of the Parmesan cheese. Transfer to a baking dish (at least 2 quart) that has been coated on the inside with butter or coconut oil and top with the bread crumbs combined with the remaining 1/2 cup of Parmesan.
