Scone (Using only natural yeast) / 天然酵母司康饼 This Scone recipe is using levain or starter. There is no adding baking powder or baking soda or using self raising flour or multipurpose flour. So There is a bit of challenging of making. The starter must be very active and strong. But the way of making is very simple. 这个烤饼食谱使用 levain 或 starter。没有添加发酵粉或小苏打或使用自发面粉或多用途面粉。所以制作上来有点挑战。天然酵母要非常活跃和强。但是制作方法非常简单。 Ingredients : 200g cake flour or plain flour 蛋糕粉或普通面粉 70g active starter 活性天然酵母 70g chilled butter 冷冻黄油 30g milk or butter milk 牛奶 15g whipping cream 奶油 20g sugar 糖 1 egg 鸡蛋 5g baking powder (option) 泡打粉(可选) 5g salt 盐 10g vanilla essence 香草精 30g any dry fruit or nuts or seed 任何干果 或 坚果 或 瓜子 Method : 1. Mixing some ingredients like : egg, milk, whipping cream, vanilla essence, sugar, salt then starter, at last is the dry fruits then put a side. 2. Sieving the flour and the baking powder (option). 3. Adding the butter in and mixing and combine the butter and flour. 4. Then adding the wet ingredients in to just gentle mixing to become a dough (don't over mix it). 5. Remove the dough and gentle pressing by hand to a square shape, about 2 cm thick. 6. Then using the scone cutter to stamp it out. 7. Before send to baking, can apply a layer of egg wash on top. 8. Preheat the oven at 200c for 20 mins and bake at 180 for 15 to 20 mins. 9.
