Sega Wat (Ethiopian Beef Stew)
Ingredients:
Berbere Spice mix:
* 1 tbsp chili powder
* 2 tbsp ground paprika
* 1 tbsp ground cayenne pepper
* 1 tsp ground ginger
* 1 tsp whole or ground cumin
* 1 tsp whole or ground coriander
* 1 tsp whole or ground green cardamom seeds
* 1 tsp whole or ground fenugreek
* 1 tsp garlic powder
* ¼ tsp ground cinnamon
* ½ tsp ground nutmeg
* ½ tsp ground allspice
* ½ tsp whole or ground cloves
Stew:
* 800g Stewing Beef
* 4 large Red onions
* 5 grated garlic cloves
* 1 can chopped tomatoes
Method :
For your spice blend, if you are using any whole spices toast them in a pan until fragrant. DO NOT LET THEM BURN
Add all spices to a Mortar and Pestle and grind to a fine powder , put aside until needed.
To a heavy bottomed pan , add a splash of oil and your minced onions, Cook with a lid on for 20 minuets .
Add a touch more oil and cook for a further 5 mins on a medium heat.
Add 2-3 tbs of you Berbere spice mix and cook for 4-5 minuets.
Add in your Beef tinned tomatoes , fill the can with water and add to the pot, cook for 5 minuets and add your garlic.
Place a lid on the pot and cook on Low/Medium for 40 minutes to 1 hour , or until stew has thickened and the beed is pulling apart.
Serve with rice , garnish with parsley.
