Large-scale kimchi jjigae

* Kimchi stew base ingredients (100 servings)

Kimchi 15kg
Minced garlic 1100g
Dark soy sauce 1100ml
Salt 130g
Cooking oil 420ml
Fine pepper powder 470g
Coarse pepper powder 270g
MSG 60g
Pepper 20g

* Pork kimchi stew ingredients (2 servings)

1 ladle of kimchi stew base (370g)
2/3 cup of pork (front leg meat) (150g)
2/3 cup of sliced onion (60g)
1/2 cup of diagonally sliced green onion (30g)
1 diagonally sliced Cheongyang pepper (12g)
3-4 pieces of cut tofu
2.5 cup of rice water (400ml)
1 tbsp of minced garlic (15g)
1.5 tbsp of coarse chili powder (15g)

* Saury kimchi stew ingredients (2 servings)

1 ladle of kimchi stew base (370g)
3 pieces of canned saury (200g)
1/2 cup of canned saury juice (100ml)
2/3 cup of sliced onion (60g)
1/2 cup of diagonally sliced green onion (30g)
1 diagonally sliced Cheongyang pepper (12g)
3-4 pieces of cut tofu
2.5 cup of rice water (400ml)
1 tbsp of minced garlic (15g)
1.5 tbsp of coarse chili powder (15g)
1/4 tbsp of anchovy stock (3g)

* Kimchi and ham hot pot ingredients (2 servings)

1 ladle of kimchi stew base (370g)
1 Spam (200g)
2 Franks (60g)
7 Vienna sausages (56g)
2/3 cup of sliced onion (60g)
1/2 cup of diagonally sliced green onion (30g)
1 diagonally sliced Cheongyang pepper (12g)
3-4 pieces of cut tofu
2.5 cup of rice water (400ml)
1 tbsp of minced garlic (15g)
1.5 tbsp of coarse chili powder (15g)
1 tbsp of beef stock (12g)

* Create kimchi stew base

1. Put coated pan on heat and pour in cooking oil.
2. Get ripened, sour kimchi and add to the coated pan.
3. Add minced garlic and pepper, and mix thoroughly.
4. Add MSG and mix thoroughly.
5. Cook for five minutes and maintain kimchi’s texture.
6. Add coarse chili powder and mix thoroughly.
7. Add fine pepper powder and mix thoroughly.

* Prepare ingredients

1. Cut onion into thick slices.
2. Slice green onion at an angle.
3. Chop Cheongyang pepper.
4. Cut Spam, fish cake, and tofu into bite sizes.
5. Cut crosses into Vienna sausages to create octopus shape.

* How to make pork kimchi stew

1. Add kimchi stew base to a pot.
2. Add finely cut pork.
3. Add onion, Cheongyang pepper, green onion, and tofu.
4. Add rice water.
5. Add minced garlic and coarse chili powder.
6. Mix thoroughly and bring to boil.
7. Add beef stock and bring to boil.

* How to make saury kimchi stew

1. Add kimchi stew base to a pot.
2. Add canned saury and the juice.
3. Add onion, Cheongyang pepper, green onion, and tofu.
4. Add rice water.
5. Add minced garlic and coarse chili powder.
6. Mix thoroughly and bring to boil.
7. Add anchovy stock and bring to boil.

* How to make kimchi and ham hot pot

1. Add kimchi stew base to a pot.
2. Add Spam, franks, and Vienna sausages.
3. Add onion, Cheongyang pepper, green onion, and tofu.
4. Add rice water.
5. Add minced garlic and coarse chili powder.
6. Mix thoroughly and bring to boil.
7. Add beef stock and bring to boil.
