Sheet Pan Breakfast

This simple one-pan meal requires only a few ingredients and a few basic pieces of equipment to prepare. Eat it for breakfast, lunch, or dinner. Mix and match different side veggies depending on what's growing in your garden! Recipe below... Sheet Pan Breakfast Recipe Adapted From: https://thecleaneatingcouple.com/sheet-pan-breakfast/ Serving Size: ½ recipe Ingredients 1 large sweet potato, washed, peeled, & cut in ½ inch pieces (about 2 cups) 1 tablespoon olive oil divided 1 head broccoli, washed & cut into small florets (about 2 cups) 1 large bell pepper, washed & sliced in ½ inch thick circles 1/2 teaspoon salt 1/2 teaspoon pepper 4 eggs Preparation Preheat the oven to 400°F. Line a sheet pan with parchment paper. In a medium-sized bowl, toss sweet potatoes with ½ tablespoon olive oil until coated. Add potatoes to the sheet pan and bake for 15 minutes. While potatoes are roasting, add the broccoli and pepper rings to the bowl and gently toss with the remaining ½ tablespoon olive oil. After the potatoes have cooked for 15 minutes, reduce heat to 350°F. Add broccoli and pepper rings to the pan and roast for 5 minutes. While potatoes, broccoli, & pepper rings roast, mix together salt & pepper. At this point, the eggs could also be cracked into individual small bowls for easy addition to the sheet pan in the next step. After 5 minutes, crack eggs into pepper rings. Sprinkle everything with seasoning mixture and return to the oven for 7-9 minutes, or until your eggs are cooked to your liking. 7 minutes will result in a runnier egg, while 9 minutes will result in a firmer egg.
