Gingerbread cookies - Piparkakut
180 g syrup, 80 g sugar, 1 tsp ground cloves, 1 tsp ginger, 1 tsp orange zest, 2 tsp cinnamon,
1 tsp ground cardamom (optional), 2 tsp baking soda, 125 g butter, 1 egg, approx. 330 g flour.
Mix the syrup, sugar and spices in a non-stick pan and bring to the boil. Add the butter in pieces in a bowl, pour the syrup and spices mix over it. Let it cool a little and add the egg. Mix the baking soda into the flour and incorporate it into syrup/spices/egg mixture. Let the dough rest in the fridge until the next day. Next day, roll the dough into a 2–3 mm thick sheet. Use a mold to make various gingerbread cookies. Bake in preheated oven 200 °C ( approx 390 °F), 7 to 10 minutes.
