Baked Fennel with Eggplant, Pepper, Tomatoes, and Cheese
Ingredients:
1 head of fennel
1 eggplant
1 bell pepper
2 tomatoes
100 g hard cheese (e.g., Gouda or Russian cheese)
2 tbsp olive oil
Salt, pepper, and dried herbs (basil, oregano) to taste
Instructions:
Prepare the fennel:
Cut the fennel into large pieces.
Boil in salted water for 5-7 minutes until it becomes tender.
Prepare the eggplant and pepper:
Cut the eggplant into cubes or slices, salt it, and let it sit for 10 minutes. Then rinse and pat it dry.
Cut the bell pepper into strips or cubes.
Heat olive oil in a pan and fry the eggplant for 3-4 minutes, then add the pepper and fry for another 2-3 minutes.
Prepare the baking dishes:
Place the boiled fennel pieces in each baking dish.
Arrange the sautéed eggplant and pepper next to the fennel.
Slice the tomatoes thinly and place them on top of the vegetables.
Add the cheese:
Grate the cheese and sprinkle it over the vegetables in the baking dishes.
Add a little dried herbs for aroma.
Bake:
Place the dishes in a preheated oven (180°C) and bake for 15-20 minutes until the cheese melts and turns golden.
Pumpkin Jam
Ingredients:
1 kg pumpkin (peeled and seeded)
800 g sugar
1 orange
1 lemon
2-3 cm piece of ginger (optional)
Instructions:
Prepare the pumpkin: Cut the pumpkin into small cubes.
Citrus fruits: Pour boiling water over the orange and lemon, then grate their zest and squeeze out the juice.
Mixing: Place the pumpkin in a pot, add sugar, citrus juice, and zest.
Cooking: Put the pot on medium heat and start cooking, stirring constantly to ensure the sugar melts evenly.
Cooking process: Bring the mixture to a boil, reduce the heat, and cook for 40-50 minutes, until the pumpkin becomes soft and translucent, and the syrup thickens.
Jarring: Pour the finished jam into sterilized jars and seal them with lids
