This traditional Tres Leches cake is made with a light tender sponge cake soaked in three types of milk. Topped with sweetened whipped cream and fresh berries it is a delicious and light dessert perfect with any meal.

Cake ingredients:
1 egg, separated
8 Tbsp granulated sugar, divided
1/2 tsp vanilla extract
3 Tbsp milk
1/3 cup all purpose flour,
pinch of salt
1/2 tsp of baking powder
Milk Mixture:
1/4 cup of heavy whipping cream
1/4 cup of evaporated milk
1/4 cup of sweetened condensed milk
Whipped Cream Topping:
3/4 cup heavy whipping cream
1 Tbsp powdered sugar
dash of vanilla
1 cup of sliced strawberries for garnish, can use any kind of berry or just sprinkle top of cake with cinnamon.
Directions:
Grease a 6 inch cake pan or 9 x 5 loaf pan well with non stick cooking spray.
Separate the egg between two bowls, placing the yolk in one bowl and the egg white in another bowl.
Add 6 Tbsp of granulated sugar, 1/4 tsp of vanilla extract and 3 Tbsp of milk. Set aside after mixing together.
Add in 1/2 cup all purpose flour, 1/2 tsp baking powder and pinch of salt. Mix until no flour is visible.
Use an electric hand mixer to beat the egg white gradually adding in 2 Tbsp granulated sugar. Beat until soft to stiff peaks form.
Fold egg white mixture into egg yolk mixture until there are no white streaks.
Pour into pan and bake at 350 degrees F for 20-25 minutes or until a toothpick comes out clean and the cake begins to pull away from the edges of the pan.
Cool in pan 10 minutes and remove. Place on a plate.
While cooling, combine 1/4 cup heavy whipping cream, 1/4 cup evaporated milk and 1/4 cup sweetened condensed milk into a bowl or pitcher.
Poke the top of the cake with a fork all over the top of the cake.
Slowly pour the milk mixture over the top of the cake and the sides.
Allow to sit for 30 minute to allow milk to absorb into cake.
Carefully drain off as much milk as you can after 30 minutes and then use a paper towel to absorb the remainder.
In a bowl, with an electric hand mixer, mix 3/4 cup of heavy whipping cream with 1 Tbsp powdered sugar and a dash of vanilla.
Spread whipped cream over top and sides of cake.
Garnish with fresh strawberries if desired.
Refrigerate for at least an hour before serving.
