Chicken wings
Beef tallow
Your favorite BBQ rub (lemon pepper)
Your preferred smoking wood (oak)
Deep fryer or a large pot
Step-by-Step Instructions:
Prep the Wings: Start by patting your chicken wings dry with paper towels. This helps them absorb the flavors better and ensures a crispier texture.
Season Generously: Coat the wings with your favorite BBQ rub. Make sure each wing is evenly covered to maximize flavor.
Smoke the Wings: Preheat your smoker to 250°F and add your preferred smoking wood. We recommend hickory or Oak for a rich, savory flavor. Place the wings on the smoker and let them smoke for about 1.5 to 2 hours, or until they reach an internal temperature of 165°F (74°C).
Heat the Beef Tallow: While the wings are smoking, heat your beef tallow in a deep fryer or large pot. You’ll want the temperature to reach 350°F (175°C) for frying.
Fry to Perfection: Once the wings are smoked, carefully transfer them to the hot beef tallow. Fry the wings in small batches to avoid overcrowding. Fry until they’re golden brown and crispy, which should take about 1- 1.5 minutes per batch.
Drain and Serve: Remove the wings from the fryer and let them drain on a wire rack or paper towels. This helps keep them crispy. Serve hot with your favorite dipping sauce or enjoy them plain to savor the smoky, beef tallow-infused goodness.
